They yield an oil that is used to flavor butterscotch, cheese, licorice Whole Spices, pickles, rum, syrup, and vanilla.

Crunchy and aromatic, fenugreek sprouts are intense in flavour and display hints of sweet curry aroma. Fenugreek sprouts are most known for their huge range of health benefits and are ideal for cleansing the system. On their own, fenugreek sprouts can taste slightly bitter so if this is the case for you, you can sprout fenugreek as a mix with alfalfa or red clover to help reduce their intensity. "I'm a slow starter in the morning, reluctant to dive into caffeine right away. I slice off strips of orange peel until I cover the bottom of a pitcher, add two tablespoons of fenugreek seed, a tablespoon of honey, and 6 cups of boiling water to start my day. Fenugreek seeds bring a sweet maple taste to this drink that blends with the honey and orange peel beautifully." - Mayona's Staff Picks, 2021

Fenugreek comes from the annual plant Trigonella foenum-graecum and is cultivated worldwide for its seeds and leaves and sprouts. The name Trigonella refers to the triangular shape of the seeds of the plant and comes from the greek word ''τρίγωνο'' which means triangle.

Fenugreek seeds are widely consumed by vegetarians as they are rich in iron, B vitamins and also protein. Their taste is slightly bitter and they smell like curry powder but when they are roasted they bring out a nutty taste that resembles maple syrup.

In Turkey fenugreek seeds are essential in the making of ''pastirma'', which is an air-dried piece of beef covered with a thick paste called ''çemen'' made from ground fenugreek, garlic and chili. The Armenians call it ''basturma'' and the Greeks ''pastourma''. In Turkey ''çemen'' paste is sold separately to be spread on bread. Ground fenugreek can also be found as an ingredient in various spice mixes such as in the Bengali five-spice blend called panch phoron, in Georgian Khmeli-Suneli and in Ethiopian berbere. Fenugreek is a good seasoning for legume dishes such as lentil and bean soups. It is also good for chicken and lamb stews as well as oven-baked potatoes.

Background: Fenugreek and chromium are known to have anti-diabetic properties and this has been well demonstrated by multiple studies. Researches have been undertaken to study thebiofortification of chromium (Cr3+) in fenugreek. Some of the researchers have studied the biofortification from the soil irrigated with tannery waste water or from soil amended by tannery-sludge, with a view of enhancing the anti-diabetic effect of fenugreek plants. The present research work was also undertaken to increase the chromium content of fenugreek seeds, but through direct treatment of chromium picolinate solution to fenugreek seeds.

Methods: Fenugreek seeds were procured and divided in four groups having three batches of 10 g seeds- treatment1, treatment2, control1 and control2. Control1 group was kept raw and was given no treatment and control2 group was germinated using double distilled water. Treatment1 and treatment2, on the other hand, were given treatment of 0.02 g and 0.04 g chromium picolinate solution, on first day and 0.01 g and 0.02 g chromium picolinate solution on second day, respectively. The germinated samples were then completely dried, powdered, digested with di-acid mixture and assayed using Inductively Coupled Plasma optical emission spectrometry method for chromium content. The treatment1 sample was selected for further nutritional analysis along with control1 and control2 group to compare the nutritional composition of raw, germinated and chromium treated fenugreek seed flour. Fifteen sprouts from treatment1 group (treatment1A group) and fifteen sprouts from control2 group (control3 group) were sown in earthen pots for the analysis of chromium content in seeds of new plants.

Conclusions: Treatment of fenugreek seeds with chromium solution seems to be an efficient and safe method for increasing their chromium concentration as compared to application of chromium to the soil for biofortification with minimal to no chance of chromium accumulation and inheritance in next generation plants. However, there is a need of more research to see how reliable these observations would be when different chromium salts and/or varied chromium concentration are used.

Little-known outside its country of origin, blue fenugreek, or utshko suneli, is indispensable to Georgian cuisine. Among other things, it is used in traditional blends such as khmeli suneli and Svanetian salt, alongside coriander and marigold petals. Its fragrance is milder that that of regular fenugreek.

Blue fenugreek owes its name to the colour of its flowers. The small seeds are dried in their casings and once ground, are used in several dishes. They are especially popular in stews and soups, in vegetable dishes or poultry and even in nut-based sauces.

Blue fenugreek leaves are also prized in some parts of Switzerland and are essential to the making of a cheese called Schabziegerkle. They can also sometimes be found in certain regional rye bread recipes from the southern Alps. 041b061a72
